Snack Box Inspiration: Quesadilla!

Quesadillas
The trick to making these less time consuming to make and easier for the kids to grab and go is baking them sandwiched between 2 baking trays in the oven instead of on a grill pan.
Makes 2 Quesadillas
Prep time 10mins, Cook time 30 mins
– 4 Corn Tortillas |
– Mayonnaise (or 2Tbsp of yoghurt mixed with 1 tsp of mustard) |
– 2 spring onions, chopped |
– 2 Slices Turkey |
– 1/2 C Cheese, grated |
You will need 2 baking trays, silicon baking paper, a knife and a heavy rock
Oven to 180°
Spread a little mayo over the corn tortilla. Alternatively, any kind of wrap will do. There are some great multigrain wraps on the market for extra roughage as well.
Sprinkle a few spring onions over it and season to taste
Cover with ham and sprinkle with cheese. Cover with a second tortilla.
Repeat for a second quesadilla.
Place quesadillas on a non stick baking tray or one lined with non stick paper. Put another tray on top and place a rock on top of that to hold the quesadilla down flat.
Pop those in the oven for 30mins and cut with a pizza cutter when cooled.
